Grilled-cheese burger with mango salsa

  1. Cut the cherry tomatoes and mango into small dice. Finely chop the cilantro. Season with lime juice, paprika powder, salt, and combine.
  2. In a small bowl, combine the sour cream, lime juice, curry powder, salt, and agave syrup. Optionally, thin out the sauce with a splash of water.
  3. Cut the cheese in half. Sauté it in a pan or grill it for a few minutes on each side.
  4. Slice the burger buns in half and toast them on the grill or in a preheated oven at 200°C for 5-7 minutes.
  5. Smash ¼ the avocado on each burger bun. Top it with baby spinach, grilled cheese, curry sauce, and salsa.
